Much people wont know about this dish however for a real taste of dominican cuisine you should give mangu a try. Its basically in short "mash plantain" commonly used as part of a typical Dominican breakfast served alongside fried eggs or fried salchichon...


4 fresh young green Plantain (Platano)
A good pinch salt per plantain
5 fluid ounces of water
3 fluid ounces of milk
4 ounces/125 grams stick of butter
Salt and pepper

you can try whipping this up now or the next time you island hopping and end up in D.A try this dish an let me know...

Well... Respect for the dish James. I never even heard about mangu before but I'm a definitely give it a try!

I love mashed potato so I suppose I would love this.
