If you never had white dumplin and lingfish, get up from your computer, go to your phone, call all the restaurants you can find and ask for dumplin and lingfish (salfish is also used but I think that is the chewy fish which I don't really care for) now!!!!.

The dumplin is basically a flower mixture rolloed into balls, flattened about 1/4 inch thick and boiled until cooked.

The lingfish is boiled then stewed in a tomato sauce and eaten with the dumplins.

Alot more scrumptious dishes are offered and available in the Caribbean but me will eat dumplin and ligfish anyday!

PostSubject: Ducana & Saltfish   Wed Apr 09, 2008 1:14 am

You've got to be kidding Jahmarley. Shawarma is the meal of choice [LOL LOL LOL - Just kiddin']

Ducana & Saltfish is an awsome Caribbean dish to treat yourself to. Ducana [wonder where that name originated from - does anybody know??] is a mixture of grated coconuts, flour, sugar, water and grated sweet potatoes. Some people, including myself, also addd raisins and cinnamon or nutmeg.

The mixture is thick, and is wrapped in banana or sea grape leaves. Some persons use foil paper, either due to lack of time to accumulate the leaves, or the skills to wrap the ducana.

Jahmarley already instructed us on how to cook the saltfish, so there is no need to go over that again.

This is a dish that everyone must have at some time or another. Trust me!!

Well... I don't know the meaning behind the name itself but the food Ducana was brought to the Caribbean from Africa.

Anyone feel free to add further...

Well I must go with Kevin on this one... Ducana & Saltfish. Never new that it came from Africa. It is quite obvious that when you visit Carib Visit's forum you will learn new things... I am not a big Chef however I will give you a recipe next time... and it will not be Macaroni & Cheese.

A forum is for learning and sharing so if Carib visit nah do that, might as well the forum close Smile (which not gonna happen).

And... Macaroni and cheese... SELL OFF!!!

What would maccaroni & cheese be without corned beef. Come on guys, you all thought you were great chefs the first time you made maccaroni & cheese and corned beef.
